Blackberry Enchilada Sauce

We love to highlight fun and creative ways to use the fresh fruit and vegetable we sell at Eckhardt Orchards. This recipe, inspired by Amy at A Blossoming Life, is a perfect way to use our blackberry in a new and surprising way.


1 cup Eckhardt Orchards blackberries

1/2 large fresh, local onion

2-3 cloves garlic

1/2 jalapeno

7 oz green chilies

1/4 cup lime juice

1 cup chicken stock

2 tsp. cumin

1/2 cup fresh, chopped cilantro

1/2 tsp. salt

1/4 tsp. pepper

1 Tbsp. avocado or olive oil

  1. Dice onion, garlic and jalapeno

  2. Cook diced vegetables in saucepan in oil

  3. Combine chicken stock, cilantro, lime juice, salt, pepper and cumin in blender

  4. Add blackberries and cooked vegetables to blender and blend until smooth

  5. Add blended sauce back to saucepan and cook down to desired thickness

Drizzle over all of your favorite Mexican dishes like enchiladas, tacos, nachos and quesadillas for s delicious, slightly sweet punch!
